Cornucopia SaladCornucopia Salad


1/2 c. sliced almonds

3 T. Sugar

1 1/2 heads romaine or mixed lettuce

4 green onions chopped

1 can mandarin oranges, drained

1 avocado sliced

1 granny smith apple sliced

1/4 cup dried craisins (dried cranberry)

1 c. chopped celery

1/2 blue cheese or gorgonzola

2 lg chicken breasts, cooked and shredded (or one rotisserie chicken)

1 tsp salt

1 tsp pepper

1/2 c. oil

2 T chopped parsley

4 T. sugar

2 T. white wine vinegar.


Toss sugar in large frying pan with almonds and cook over low heat to medium heat, stirring occasionally until almonds are coated.  Don’t let sugar burn.  Spread on foil to cool.  Tear lettuce leaves into bite sized pieces.  Mix lettuce, onion, oranges, avocado, apple, celery, craisins, cheese, chicken and almonds.  Mix remaining ingredients for dressing.  Toss with salad ingredients.  Serves 5-6.


Spray foil with pam so it does not stick.
